In a large bowl, whisk together the flour, cocoa powder, baking powder, and salt.

In another bowl, whisk together milk, egg, honey, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix. Fold in chocolate chips if using. Let the batter rest for 5 minutes.
Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil. Pour 1/4 cup of batter per pancake onto the pan.
Cook for 2–3 minutes or until bubbles form on the surface. Flip and cook another 1–2 minutes until set. Repeat with remaining batter.
Stack pancakes on a plate and drizzle with extra honey. Top with whipped cream, berries, or more chocolate chips if desired.
