In a milk frother (cold setting) or using a handheld frother, combine cold milk, honey, and vanilla extract. Froth until thick and airy (about 30–60 seconds). Set aside.
Place 4–6 coffee ice cubes into each glass. Pour 1 cup of cooled coffee over the cubes.
Spoon or pour the vanilla-honey foam over the iced coffee. Let it gently float for a layered look.
