In a large skillet, heat olive oil over medium heat. Sear chicken for about 5 minutes per side until golden. Remove and set aside.
Add butter to the same skillet, sauté onion for 3 minutes until soft. Add garlic and sage, then add apples and cook 3–4 minutes until lightly caramelized.
Pour in chicken broth, apple cider vinegar, and Dijon mustard. Stir, then return chicken. Cover and simmer on low for 10–12 minutes until cooked through.
Uncover and simmer to slightly reduce sauce. Slice chicken and serve with apples and sauce.
