Vegan Banana Bread is a moist, fluffy, and naturally sweet quick bread that makes the most of overripe bananas. This version is completely plant-based, using no eggs or dairy, yet delivers classic flavor with warm cinnamon and optional nuts or chocolate chips. Perfect for breakfast, snacks, or dessert — and even better the next day!

In a large bowl, mash the bananas well. Stir in coconut oil, brown sugar, plant-based milk, vinegar, and vanilla extract. Mix until smooth.
Sift in flour, baking soda, cinnamon, and salt. Stir until just combined — do not overmix. Fold in chopped walnuts or chocolate chips, if using.
Transfer the batter to the prepared loaf pan. Smooth the top and add extra banana slices or a sprinkle of nuts if desired.
Bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean. If browning too quickly, tent with foil in the last 10 minutes.
Let the banana bread cool in the pan for 10–15 minutes, then transfer to a wire rack. Slice and enjoy warm or at room temperature.
